A late autumn smoothie bowl may seem an unusual treat to share right now with the arrival of colder weather and heavier comfort foods. When you savor your first creamy spoonful you’ll realize that this is actually the perfect time.

What could be more snuggly than curling up in a cozy chair with a mug of warm chai tea and a bowl of this mellow butternut smoothie? Definitely my idea of bliss.

I actually love smoothies year round anyway, and they make great toppers on hot porridge too. Yeah, definitely so YUM! Check out my banana & meyer lemon oatmeal smoothie recipe here, with more ideas here.

My Autumn Dreams Smoothie Bowl uses an unusual ingredient that I love. You can’t taste it, but it adds a creamy fluffy texture. It’s a great alternative to bananas if don’t like their taste, can’t eat them, or want a more subtle flavor.

The ingredient I’m talking about is frozen riced cauliflower. If you haven’t used it before you’re probably saying yuck! It really isn’t though, and you honestly cannot taste it. I love eating healthy, but not at the expense of taste, so give it a try. I swear you’ll be amazed!

I also added frozen riced sweet potato and mesquite powder. If you haven’t tried mesquite powder it adds a delicious caramel undertone. And speaking of another super YUM caramel flavor, that’s vegan caramel on top of my smoothie. It tastes really, really scrumptious on just about everything. You can make it with all nut butter, or all tahini, or a combination.

Very Simple Vegan Caramel Sauce
2 tablespoons nut butter, tahini, or a mix
1 – 2 tablespoons pure maple syrup

Stir the nut butter, and / or tahini, and maple syrup until blended. For less sweet just use less maple. You can increase the amount and store in a lidded container in the fridge.

Here are a few more autumn recipes I want to share with you. The first is an Autumn Apple & Pear Smoothie.

The ingredients to this smoothie are simple. It’s the mixing of different apples and pears that make it magical, and you can almost taste the orchard when you do that.

These adorable little pears are a delicious snack with avocado toast! And this last share is another smoothie that has apples and pears too, but its lovely color comes from purple sweet potato.

Oh and one last thing. I know Hanukkah is still a couple of weeks away (December 2), but I wanted to share this a little early as this holiday comes so soon after Thanksgiving this year.

One More Topping Recipe- It’s Caramel Granola!

One of my friends, who recently went vegan, asked if I had any ideas for this lovely celebration. She was thinking she could test some of the dishes, while also trying out recipes for her vegan Thanksgiving.

Hanukkah foods tend to be dairy heavy, but I found very delicious recipes that have already been veganized.

Autumn Dreams Smoothie Bowl

Serves: 1-2 bowls Cooking Time: 5 -10 minutes

Ingredients

  • 1 large rip banana sliced & frozen
  • 1/4 cup riced butternut frozen*
  • 1/4 cup riced cauliflower frozen*
  • 1 scoop plant based protein powder, optional
  • 1 teaspoon mesquite powder, optional

Instructions

Set frozen fruit and veggies on the counter for 5 - 10 minutes to thaw just a bit. It makes it easier for your food process and blender to handle, and you also won't need to add any liquid. This is key if you want to make a thick smoothie bowl.

Add all ingredients to a high speed blender or food processor and blend until creamy. Pour into a bowl and top with fruit, seeds, nuts, and with vegan caramel sauce. For a drinkable smoothie add plant based milk to thin it.

Notes

*If you aren't using banana then just use more of the cauliflower / sweet potato mix. Green Giant makes a resealable bag of frozen Riced Veggies Cauliflower & Sweet Potato , and it's perfect for making creamy smoothies. Don't cook it first. Just take the amount you need out of the bag.
