Birthday Celebration & Wishes

YAH my birthday is today!!

Wouldn’t a birthday celebration be magical with these beautiful pink cupcakes? And this cute Unicorn Cake is so adorably sweet too. Hey it’s not just for kids either! If you follow me on Instagram then you know how much I love pretty unicorn food, so my birthday party would not be complete without it. 🦄

I discovered this blog the other day, and I am so glad that I did. There are even more gorgeous treats on Holly’s The Little Blog of Vegan. She has such a lovely and really fun place, and her Instagram is also full of amazing food! Holly’s recipes are pretty simple to make too, and I’m definitely going to be filling our house with her creations.

In the meantime, maybe I can get my husband to at least make me this adorable smoothie bowl. hint, hint, hint

Want more unicorn recipe ideas? This beautiful blue Unicorn Cheesecake is a not only a delicious treat, it is super healthy too! (vegan & paleo friendly) And don’t forget to bookmark my What I Feed My Unicorns guide.

birthday

As for birthday wishes… I want a place in a mountain clearing. A little cabin with a green footprint. Our food will be homegrown, and we can walk or ride bikes for miles and miles without having to first hop in a car.

There will be a pond for swimming in the heat of a summer day and skating when the snow falls thick. And there will be meadows of blue and gold wildflowers for the bees to hum and wildlife shelter. A sanctuary.

When you visit, we’ll sing along with the radio in the kitchen, hang Japanese lanterns from the trees, and dance in the moonlight with the soft glow of fireflies lighting our way.

And when the sun tops the pines in the morning, we’ll run down to the pond, whooping it up and forgetting what it means to be an adult. Please say you’ll visit. Please say you’ll stay.

    Happy belated Birthday dear Katherine!
I miss you! I miss your uplifting comments and your gorgeous posts on instagram. I’ve also been off since November(health issues). Now I’m slowly trying to come back and reconnect. I’ve just checked your account because I was wondering why I haven’t seen anything of you during the few times I was scrolling the feed again. Now I just found out what happened – what a unpleasant and strange experience this must have been for you. I also tried to find a contact adress, when one of my pics mysteriously dissapeared last week…but then I gave up, it wasn’t very much liked anyway.
Reading about your thoughts, I can totally relate (also same problem with the poor light too). Instagram is really time consuming and can sometimes suck you in. But I missed it. So I’m currently trying to find the right amount of inwolvement for me. I love food photography, developing recipes and I want to contribute to the vegan movement and I love to connect to all the nice people. Well, we will see what happens. May you always be well my dear. Hugs, Pat

You are such a beautiful person Pat, and what a fantastic birthday wish!!! Thank you, thank you thank you so much!

I miss you too, and you always had the most amazing and gorgeous food styling and photos. Your messages were always right on point and much needed too. I’m so sorry to hear about your health issues, and I hope that you are doing much better now. I’m so sorry I wasn’t there to offer support and to make sure that you knew that you were loved and missed very much. I am so glad that you are staying with Instagram though, because we need more voices and inspiration like yours. Who knows… maybe I’ll be back sometime in the near future too.

Take care of yourself, and I’m sending you lots of love and gratitude for your wonderful friendship!
