Tropical Oatmeal Smoothie Bowl

Scroll through my Instagram, and you’ll see how much I love a tropical oatmeal smoothie bowl.

It doesn’t matter what time of year it is, although summer fruits are definitely the most luscious!

In the winter months I’ll add a scoop of nice cream smoothie to hot oats, and OMG that’s such a sensual taste experience!

The melting smoothie really makes your oats lush and creamy.

The summertime bowls are just as delicious, but in a different way.

I like mixing old fashioned oats with chia to make a healthy and very yummy parfait.

Turn plain oatmeal into a tropical oatmeal smoothie bowl

 For my bowl above I just swirled a dragon fruit & strawberry smoothie into my oatmeal.

Then I topped it with mango and kiwi slices, plus sweet blueberries, hemp hearts, and pumpkin seed.

The pretty little flowers are edible, and I grow a pot on my deck to decorate my salads and actually most everything I eat.

Oatmeal: I use 3 different types for my bowls- steel cut, chia-oats, and rolled.

Steel Cut Oats: I use this more for winter smoothie mixes, and add-ins like quinoa and buckwheat groats give additional healthy benefits.

Chia Oats: you can make a big batch to store in the fridge for quick delicious snacks, as well as adding into your smoothies, and I have two recipe links below.

Rolled Oats: I use these for parfaits, and I prefer them in smoothies (drinkable and bowls) during warm weather.

As for smoothies, I make them thick for the bowls, and I have lots of recipes on Instagram.

Tropical Oatmeal Smoothie

Print Recipe
Serves: 1 -2 bowls Cooking Time: 5 - 20 minutes (including prep time)

Ingredients

  • Dragonfruit & Strawberry
  • up to 1 TBSP pink dragon fruit (pitaya) fresh, frozen or use the powder
  • handful of ripe strawberries, washed & cored
  • 1 large ripe banana that has been sliced & frozen or
  • 1/4 cup frozen riced cauliflower*
  • 1/4 cup non-dairy yogurt, optional
  • 1/ teaspoon pea protein powder, optional
  • 1 teaspoon maca powder, optional
  • Cooked Old Fashioned Oats
  • Or instead you could use the finer grain Quick 1-Minute Oats
  • Note: For both follow the recipe on the container for thicker oatmeal

Instructions

Set frozen fruit and veggies (if using) on counter for about 5- 10 minutes to thaw just a bit.

Add 1 teaspoon of dragon fruit and the rest of your ingredients to a high speed blender or food processor. Pulse until blended.

Check the color and add more dragon fruit, a teaspoon at a time, until you reach the color you desire.

Taste and adjust flavor. I don't add any sweetener, because frozen bananas make it the perfect level of sweetness for me.

If you're using cauliflower, or like it sweeter, then add some dates, maple syrup, or other type of natural sweetener.

Don't add any liquid to your smoothie, because you want it thick and creamy.

I also find that making it in a food processor works best for thicker smoothies.

I do use my Vitamix for drinkable smoothies though.

Stir the oats and smoothie together and top with fresh fruit.

Notes

*Frozen riced cauliflower is available at most grocery stores, or you can make it yourself. (I like this blend with sweet potatoes.) You can't taste it in the smoothie, but it makes it very creamy. It's also a great alternative to bananas for people who can't eat them or don't like the taste.
