Thanksgiving

Hey there! Just popping in with lots of vegan Thanksgiving recipes. I still haven’t finalized my own menu, because I keep finding more delicious ideas and changing my mind. It’s a gargantuan list, and I am sharing it with you today.

Lots of comfort food for the colder weather. Yah! And speaking of that, I think winter will be very cold and snowy for us this year. We had the LONGEST summer EVER, and then we basically skipped over autumn. Really bummed me out, because fall šŸ is my absolutely favorite season.

We have freezing rain right now. Ugh! But I’m bundled up and drinking hot chocolate while writing this post.

Ok, like I mentioned, I’m going back and forth on what to serve. For the main dish I could make this very, very delicious lentil loaf. It actually tastes and smells just like Thanksgiving, and I could top it with cranberry sauce before placing it in the oven. YUMMY!

But then look at this beautiful Vegan Vegetable Wellington by Alissa at Connoisseurus Veg. Everything about it sounds so wonderful, and I’m definitely making it soon if I don’t end up making it for Thanksgiving. Hey maybe I could combine my lentil loaf recipe with this one. That could be a fantastic idea! Huh, I need to make a note on that. Yikes even more recipes. lol

Or how about some scrumptious Creamy Pumpkin Pasta with Coconut Bacon, plus it also has fried sage which I adore. But good lord COCONUT BACON!! Ania (Lazy Cat Kitchen) has lots more vegan Thanksgiving recipes on her site, like these Maple Roasted Carrots with Cranberries, so you should pay her blog a visit.

Now that leads us onto the side dishes. I LOVE SIDES! Honestly, I could make a meal of those alone and would do so if it was just me at the feast. Anyone else in this camp? If so then we need to be dinner buddies from now on.

First up is a Roasted Delicata Squash Couscous (pictured below). I can already imagine savoring the flavors of this dish, and the presentation is gorgeous too. You only need to change one ingredient to make it vegan, and that’s super easy! Just use non-dairy Parmesan or omit it.

It would be perfect for the upcoming winter holidays too, and I do love the warm comfy cozy look and taste of this Butternut Squash Jeweled Rice, so maybe I’ll save the couscous for Christmas and make the rice for Thanksgiving. Ugh decisions, decisions…

I’m going back and forth between smashed sweet potatoes or pillowy-soft mashed potatoes too. Well you can never have too much of either, so maybe the first one maple roasted and how about the one below for the latter? Boy, you could make this Slow Cooker Mashed Potatoes & Cranberry Mushroom Sauce into a meal by itself!

I also love the look of this Kale and Butternut Squash Salad, and the Maple Curry Dressing sounds heavenly.

This salad uses Lacinato kale, which is a fave of mine.

My husband doesn’t like kale though, so I may add in baby spinach to temper the taste somewhat but still have the stronger texture of the kale.

They added cheese to their recipe, but I’ll omit it. Maybe add in some spicy sweet Honey Crisp apple chunks.

Ohhh and a sprinkling of pumpkin spiced pecans would be yummilicious too!

Soup, in just about every combination, is something I enjoy eating year round. BUT I like it in the starring role.

I know many people like to serve it as one of the secondary courses though, and I think this Chai-Spiced Apple Sweet Potato Soup would be a lovely addition to your Thanksgiving meal.

Brussels sprouts are a very recent addition to food I look forward to eating, and it seems to be one of those vegetables that people either love or intensely dislike.

I have to admit that the only way I like them are roasted, so if you’re like me here’s great info on how to do that. I’m thinking a miso-tamari glaze would be delicious.

Delicious is also how I would describe Julie’s (The Simple Veganista) rich looking, umami Mushroom Gravy, and also her Easy Scalloped Potatoes.

They aren’t presented as such, but wouldn’t they taste soooo good together?! (BTW: This is another blog I follow, and you should too. It’s amazing!)

And last but definitely not least (since I am a firm believer in life being uncertain so eat dessert first) it’s time for the sweets!

I’m actually going to be making a vegan pumpkin cheesecake, and I’ll have to share that recipe another time.

My cheesecake does not taste vegan, so I have to get my butt into gear and get you that recipe.

Oh and I also have a vegan brownie recipe that doesn’t taste vegan either. Yeah, yeah stop bragging and start sharing. haha

This may look like a non-traditional Thanksgiving dessert. It may look like a very decadent, very lush chocolate cake… ok it is a very non-traditional, very decadent lush chocolate cake,

BUT the dreamy creamy chocolate filling has pumpkin purƩe. AND this sexy chocolate cake is also vegan!

Yep, Tieghan of Half Baked Harvest made this vegan. Let’s give her a strong chorus of Hallelujah! I’ve made this cake before, and it truly is the ultimate!

I haven’t tried this Vegan Pumpkin Pie yet, but I’m going to make it this weekend. I haven’t had any luck with other recipes, but Marina’s looks very promising.

Don’t you want to just grab that spoon off the screen and lick it clean?!

This, my friend, is Vegan Pumpkin Mousse drizzled with homemade caramel sauce!

Can you believe that this sinful looking treat is actually healthy for you? And this Pumpkin spice latte chia pudding by Jess of Choosing Chia is too.

I might as well buy stock in pumpkins at the rate I’m going through them.

Check out your local grocer. I’ve been seeing so many fantastic vegan meal options as part of the Thanksgiving meal plans they offer.

Also there are delicious vegan holiday dishes in the freezer section. Gardein, Field Roast, and Tofurky have great selections at this time of year. Bon AppƩtit!

      Hey Sarah, it’s so wonderful to hear from you! I miss chatting and seeing your gorgeous postsā¤ļø I can’t believe it’s been over two years, but in some ways it feels like so much longer. I sometimes think about coming back, but so much has changed since then. Who knows though, maybe I’ll stop in just check up on everyone. I hope life has been good for you, and I also hope you have a very lovely holiday season!!
